Branston & Goat’s Cheese Filo Parcels

When it comes to Christmas canapés, few are quite as delicious as Branston and goat's cheese filo parcels! That sweet tang of Branston works so well with the rich, salty cheese and that crunch of the baked filo pastry is so marvellously moreish. Give them a go...
Ingredients
- 1 tsp Branston Small Chunk per parcel
- c.125g goat’s cheese
- 1 pack ready-made filo pastry sheets
- 50g butter, melted
- Fresh thyme, 1 sprig
- Honey, for drizzling
- Salt and pepper, for seasoning
Method
- Preheat the oven to 200C.
- Slice the filo pastry into squares and make stacks of 4 squares. Take the stacks and place each one in the indents of a muffin tray. Brush with butter.
- Add a little goat’s cheese, a spoonful of Branston, and a couple of thyme leaves to each stack of pastry. Bring up the sides of the pastry and close over the filling.
- Bake in the oven for 15 - 20 minutes, until the pastry is golden.
- Remove from the oven and drizzle with honey. Garnish with more thyme leaves and serve. Enjoy!
