Branston Cheese & Bacon Breakfast Muffins

Bring out these savoury cheese and bacon muffins and you are sure to be everyone's favourite baker. What's more, this is a really easy breakfast muffin recipe to create at home. Full of cheese and bacon, and topped with Branston Rich & Fruit Brown Sauce, they're an instant crowdpleaser!
Ingredients
- 60g Red Leicester, grated
- 60g cheddar, grated
- 5 rashers of streaky bacon, cooked until crisp and finely chopped
- 150ml sunflower oil
- 1 large egg
- 284ml carton buttermilk
- 70ml whole milk
- 500g self-raising flour
- 1 tsp English mustard powder
Method
- Preheat oven to 200c.
- Fully combine the egg, oil, milk, and buttermilk in a bowl.
- In another bowl, combine the flour, mustard, cheeses, and two-thirds of the bacon.
- Gently mix together the wet and dry ingredients until just incorporated.
- Spoon the batter evenly into paper muffin casings in a muffin tray. Bake until risen and golden, 20 - 30 minutes. Allow to cool.
- Drizzle over Branston Rich & Fruity and top with the remaining bacon. Enjoy!
